Wild Alaska Pollock Cous Cous Salad

Ingredients:

2 Wild Alaska Pollock Air Fried Fillets
1 cup couscous
1 cup low-fat thick Greek-style yogurt
2 tbs mayonnaise
16 cornichons, finely chopped
2 tbs chopped dill, plus extra sprigs, to serve
2 tbsp lemon juice
1 tbsp baby capers, rinsed, drained, chopped
1/2 red onion, thinly sliced

Directions:


• Cook the couscous according to instructions. Meanwhile, air fry Wild Alaska Pollock fillets.
• Make the tartar sauce. Combine yogurt, mayo, cornichons, capers, dill, and lemon juice and mix until evenly distributed.
• Plate by laying out couscous with Wild Alaska Pollock fillets. Top with tartar sauce, fresh red onion, dill, and more lemon juice to taste. Enjoy!
