Hot Honey Wild Alaska Pollock Bites

Serves 4:
Ingredients:
4 tablespoons unsalted butter
8 garlic cloves, chopped fine
1 teaspoon cayenne pepper
1 cup honey
1 cup hot sauce
1 teaspoon kosher salt
Wild Alaska Pollock:
8 frozen Wild Alaska Pollock breaded fillets, cut in half (you can find them in the frozen aisle)
2 cups oil for frying
2 teaspoons sesame seeds
Directions:
Hot Honey Sauce:
Heat a medium pot over medium heat. Melt 2 tablespoons butter, stir in garlic and cayenne pepper. Add honey, hot sauce, and salt, bring to a boil, and cook on med-low for 8-10 minutes, until sauce thickens. Stir in the remaining butter until melted. The sauce should coat a spoon.
Wild Alaska Pollock:
Heat a large skillet over medium heat to 350°F. Fry Wild Alaska Pollock bites for 1 minute and 30 seconds per side until golden brown. Drain on paper towels.
Toss Wild Alaska Pollock breaded fillets in half of the sauce until coated. Garnish with sesame seeds and serve the remaining sauce on the side. Enjoy immediately.
