Easy Poached Wild Alaska Pollock

Serves: 4
Skill Level: Easy

 

Ingredients

2 cloves garlic, minced

1 small yellow onion, diced

salt

pepper

olive oil

1 cup vegetable stock

4 skinless Wild Alaska Pollock fillets, frozen

2 cups chard or collard greens, sliced into ribbons

 

Directions

Heat a pan over medium-low and drizzle in olive oil. Add garlic and onion and sauté until tender, about 5 minutes. Season liberally with salt and pepper.

Add stock and frozen Wild Alaska Pollock fillets and cook 20 minutes or until fish is cooked through.

Meanwhile, prepare wild rice or quinoa according to packet instructions and set aside.

When Wild Alaska Pollock has finished cooking, use remaining broth + aromatic combination in the pan to wilt your greens. Serve!
