Baked Lemon-Pepper Wild Alaska Pollock

Ingredients

4 Perfect Pollock Portions® by American Seafoods (5 to 6 ounces each)
¼ cup freshly squeezed lemon juice
3 tablespoons dried parsley
2 tablespoons lemon zest (optional)
4 tablespoons olive oil, keep 1 tablespoon separate
2 tablespoons salt
1 tablespoon ground black pepper

 

Directions

Preheat oven to 450°F.  Coat a glass baking dish with 1 tablespoon of olive oil.  Mix together parsley, lemon juice, lemon zest, olive oil, salt and pepper.  Pat the Perfect Pollock Portions® fillets dry with a paper towel and place into the coated baking dish.  Coat the fillets with the lemon mixture and sprinkle both sides with additional salt and pepper.  Bake the Perfect Pollock Portions® for about 10 minutes ensuring that it reaches an internal temperature of 145°F.  Transfer the baked Perfect Pollock Portions® to a serving platter and garnish with fresh lemon wedges, fresh ground pepper, and dried parsley.
